Miso and Garlic Turkey Burgers
These are definitely the best turkey burgers I’ve ever made/had. The miso gives them such a savory flavor, you won’t feel like you’re eating a turkey burger. I top them with some mayo mixed with lime juice and garlic, that really pairs well with the miso flavor.

Ingredients:
Burgers:
1 lb ground turkey
1 egg
kosher salt
4 sprigs of thyme, leaves picked off, stems discarded
2 tbl red miso
3 garlic cloves, peeled and grated
1/2 cup of panko breadcrumbs
Topping:
1/4 cup mayo
squeeze of lime juice
1 clove of garlic grated
kosher salt
4 brioche buns
mesculin greens

Preheat the oven to 350F. In a medium bowl, mix together the turkey, miso, thyme, garlic, egg, a good pinch of kosher salt and the panko bread crumbs. The mixture will be wet, that’s ok! Divide and shape them into 4 equal sized patties. Set a cast iron skillet over medium high heat. When hot add 2 tbl canola oil and when shimmery and just starting to smoke, add the burger patties. They will wear quickly because of the miso, so keep an eye on them and lower the heat if necessary, but you just want a good sear on both sides before popping them in the oven.
After both sides are nice and golden brown, put the pan into the oven to finish cooking, they need to be 165F inside, so check after 4 minutes and take out if done, if not let em cook until they’re cooked through! ;)
Remove immediately from the pan and place on a bun to rest a bit. Mix the mayo, lime juice, garlic and salt in a small bowl and taste for more lime or more salt. Spread some of the mayo mixture onto the top of your bun and top with mesclun greens. Enjoy!!
