Turkey Burger with Chipotle in Adobo and Cumin

I know turkey burgers can get a bad rep of being dry and just not tasty, but I find if you keep the mixture on the wetter side, and use an instant read thermometer to take them off the heat as soon as they’re cooked through, then you’ll have a really tasty burger and you won’t miss the beef.

Makes 4 Quarter pound burgers

Ingredients:

1 small yellow onion diced

2 garlic cloves minced

1 chipotle chile in adobo sauce minced

A handful of cilantro leaves and tender stems Finely chopped 

1 egg

1 tsp ground cumin

1/2 tsp coriander 

3/4 tsp kosher salt

1 lb ground turkey

1/4-1/2 cup of bread crumbs 
1 tbl canola oil

Topping:

1/4 cup ketchup

1/4 cup mayo

1 chipotle chile in adobo sauce minced

kosher salt

freshly ground pepper

Ok so…

In a medium bowl, combine the onion, garlic, chile, cilantro, egg, cumin, coriander and salt. Add the ground turkey and using your hands squeeze the turkey into the herb and egg mixture until combined, add 1/4 cup of bread crumbs and combine, if the patty’s are too wet add up to another 1/4 cup more of bread crumbs. As long as they can be formed into a patty and hold their shape they’ll be good to go. Shape into 4 burger party’s by gently pressing into 4 equal balls and then pressing them down into a patty shape. Press the middle of the burger to make a little shallow well in the middle of each one to assure even cooking. Sprinkle kosher salt on each side of the patties.

Heat a cast iron or heavy bottom skillet over medium high heat. Add the canola oil and heat until shimmering and barely smoking (if it starts to smoke take off heat and allow it to cool for a few before proceeding.)

Place the burger patties on the skillet and cook on the first side for about 5-6 minutes until a nice brown crust forms. Flip and then keep an eye on the inner temperature. For a turkey burger you want to hit 160F-165F before removing from the heat to let rest.

For the topping: Combine the ketchup, mayo and chipotle. Taste and season with salt and pepper.
