Ham and Mozzarella Melt with Apple and Red Onion

Ingredients
8 thick slices of country white, or sourdough bread
16oz Mozzarella, pulled apart into pieces
Kosher salt
3 sprigs of thyme, leaves removed and stems discarded
8 slices of ham
A half of a red onion, peeled and thinly sliced
1 honey crisp apple, thinly sliced
4 tbl olive oil, divided
ok so..Heat a cast iron or heavy bottomed skillet over medium heat until hot. While you wait assemble your sandwiches starting with the bread then mozzarella a sprinkling of salt and thyme, then ham, apple,onion, and some more mozzarella. Then add 2 tbl of olive oil to your pan and let heat until shimmering. Place 2 sandwiches at a time into the pan and press down with a spatula. Let them cook on the first side for 2-3 min or until golden brown. Carefully flip and press down again. Then let cook for a further 2 minutes or so, or until the cheese is melted. Repeat with the other 2 sandwiches and the remaining 2 tbl of olive oil. Cut in half and enjoy!
