Grilled Cheese with Red Onion and a Labneh Garlic Spread
This is great for a cold winter day, it’s crunchy and melty and garlicky and really hits the spot if you’re wanting some comfort food. For some reason I feel like this would also taste great with some raspberry jam if you’re into that sorta thing, which I am…I haven’t tried it yet but let me know if you do!

Makes 2 Sandwiches
Ingredients:
4 tbl olive oil, divided
4 tbl Labneh
1 small garlic clove
Kosher Salt
Freshly ground black pepper
4 slices of sourdough or any crusty bread, about 1/2 inch thick
8 slices of american cheese (or any melty cheese you like)
1/4 of a red onion, sliced thinly
Some torn oregano leaves
Ok so…
Heat a large skillet or cast iron (preferably) over medium heat while you make the spread, when hot add 2 tbl of olive oil and heat until shimmery. Meanwhile, mix the labneh and garlic and season with salt and pepper in a small bowl. Taste and add more salt or pepper if necessary. Spread the labneh over a slice of bread, then add two slices of cheese, then the red onions and oregano. Sprinkle with some salt and pepper, then add another layer of 2 slices of cheese and spread more labneh on the other half of the sandwich. Repeat with the remaining bread. Place one sandwich in the hot oil and let it get crispy and golden brown for about 3-4 minutes, occasionally pressing down with a spatula so the cheese gets nice and melty. Carefully flip over and repeat on the other side. Remove and place on a wire rack. Add the last 2 tbl of oil and let heat before adding the second sandwich and doing the same thing all ova again. Slice in half and serve!
