Taco Tuesday’s 2.0
These are the tacos I make when I have a little more time. They’re still really easy, but not as easy as throwing some spices in and calling it a day (not that there’s anything wrong with that, see my other taco Tuesday recipe ;)).

Ingredients:
1 yellow onion, finely diced
1 yellow or orange bell pepper, cored and finely diced
kosher salt
1 large clove of garlic, minced
1 lb ground beef
1 tbl chili powder
1 1/2 tsp cumin
1 tsp oregano
1/4 tsp coriander
6 Roma tomatoes, diced (or you can use half a can (8oz) of a of diced tomatoes)
For serving:
lime wedges, for serving
cojita cheese, for serving
flour or corn tortillas
Heat a medium skillet over medium heat, when hot, add 1/4 cup of olive oil and let that heat until shimmery. Add the onions and peppers and a pinch of kosher salt, and cook stirring occasionally until tender, about 7 min. Then, add the garlic and let it cook for about 1 minute.
Raise the heat to medium-high and add in the beef, breaking it up with a wooden spoon. Let it sit and brown for about 3 minutes before stirring again to get the other side. Cook the other side for just a minute or 2 and then drain out the fat in a colander over the sink and return to the pan. Season the meat with a good pinch of kosher salt. Make a well in the center of the meat mixture and add the spices in the center to begin toasting. Stir and let toast for about 1 minute, or until fragrant. Add in the tomatoes and another pinch of salt and stir everything together. Let simmer for about 5 minutes. Taste and add more salt if necessary. Serve!
