Apple Cider and Mustard Vinaigrette
I read something funny recently, that American’s say “it’s fall y’all”. I thought, I never say that. hmmm..well now I kind of want to say it, and I’m from New York originally, so this is a little disturbing to me, but, here it goes. It’s fall y’all!!! Ok, now that that’s out of the way, this is your go-to fall vinaigrette that will give you a warm and fally feeling atop any greens your heart desires. Enjoy.

1/4 cup Apple cider Vinegar
1 1/2 tbl stone ground mustard
*1/4-1/2 cup of olive oil
2 tbl apple cider
leaves from 6 sprigs of thyme
kosher salt
freshly ground Black pepper
Any greens you like, I like arugula
*If you like your vinaigrette a little more on the bright side, only add 1/4 cup of olive oil, if you’d like more of a balanced vinaigrette, whisk in the total 1/2 cup.
In a medium bowl, whisk together the apple cider vinegar, mustard, and a pinch of kosher salt. Slowly drizzle in the olive oil while whisking constantly, until you have a fully combined vinaigrette. Then whisk in the apple cider and another pinch of kosher salt, some black pepper and the thyme. Taste and adjust the seasoning if necessary, let sit for about 10 minutes for the flavors to combine before dressing any greens you like! I like this on arugula for a peppery bite.
No matter what greens you choose, always add a little dressing at first and use your hands to coat the lettuce, then taste and add more dressing a little at a time. You don’t want too much or it will be soggy. Enjoy!
