Fruit Syrup made with Agave
This recipe is a great way to start trusting your own palate when you cook. Keep tasting and adding until you find the balance you like. The agave will give it sweetness, lemon will balance the sweetness and tone it down as will kosher salt. The cinnamon gives it a nice round flavor and a savory element.

3-4 servings
Ingredients:
1 lb of frozen fruit or fresh (any berry will work for this) I use mixed berries
1 1/2 tsp of agave
1 tsp of fresh lemon juice
A pinch of kosher salt
A pinch of cinnamon
Add the berries and a splash of water to a medium saucepan. Place over medium heat and bring to a simmer, add the agave and a pinch of salt and let simmer until fruit is heated through, and starts to soften. Add the lemon juice and cinnamon and continue to simmer until it reaches the thickness you want. I cook it until I can see a line for a few seconds after dragging a spatula through the juices on the bottom of the pan. Taste and adjust seasoning if necessary. Pour right onto pancakes or waffles or yogurt!
