Fluffy Pancakes
Ok so I actually have no memory of where this recipe is from :/. It’s been hanging in my kitchen cupboard for months now and I tried locating it online and I just can’t figure it out, so if you recognize it let me know ;) lol. Anyway, it took me many mornings to find my favorite recipe for pancakes. This is definitely “the one”. It makes tall fluffy pancakes with just the right amount of sweetness and it’s a no-fuss recipe.

Ingredients:
1 1/2 cups all purpose flour
3 1/2 tsp baking powder
1 tsp kosher salt
1 1/4 cups of milk
1 tbl sugar
1 egg
3 tbl unsalted butter melted and cooled, or vegetable oil
Preheat a griddle or cast iron pan over medium heat. Whisk the dry ingredients in a large bowl, add the wet and whisk until combined but there are still lumps! I use an ice cream scoop to measure them out, but you can also use a measuring cup. When you flick water at the pan and it sizzles it’s ready. Cook the pancakes a few minutes on each side, checking for a golden brown color before flipping. Serve straight away with whatever you like or place on a cooling rack and let cool before storing in ziplocks in the fridge for up to a week. Reheat in the toaster on low.
