Mini Pumpkin-Applesauce Muffins
I’m always looking for easy and healthy muffin recipes for the kiddos. This one is super easy, uses maple syrup and applesauce in place of sugar, and is super tasty. Make them for yourself or your little ones and you won’t regret it!

Makes 24 mini muffins
Time: 15min
1/2 cup of whole wheat-white flour (or whole wheat)
1/2 cup of All Purpose Flour
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp kosher salt
1 tsp ground cinnamon
1/4 tsp ground ginger
a pinch of ground nutmeg
1/3 cup of maple syrup
1 egg
1/2 cup of milk
2 tbl applesauce
3/4 cup canned Libby’s pumpkin puree
1/2 tsp pure vanilla extract
Preheat the oven to 375F, spray a mini muffin tin with non stick spray.
Combine all the dry ingredients in a large bowl. Whisk together all the wet ingredients in a medium bowl. Pour the wet into the dry and fold it in with a spatula until you don’t see any more specks of flour.
Using a 1 tbl scoop, fill each mini muffin cup with the batter. Bake for 8-10 min, until a toothpick or cake tester comes out clean. Let cool slightly in the tin for 2 minutes, then remove to a baking rack to cool.
